i received this new cookbook for christmas, and tested it out new year's morning.
this little beauty is an apple dappy. it's a traditional dish from the western side of the british isle. it's a cross between a bread pudding and a cinnamon roll, with baked apples rolled up inside.
it was lovely, especially with a touch of cream poured over the top. i altered the recipe a smidge, adding cardamom to the dough (to add more flavor), and adding cinnamon to the apples as they were cooking. i think the next attempt will include some apple, or pear, brandy to the baked apples.
this cookbook is fantastic. oodles of great recipes for fruit based baked goods. i would highly recommend adding this to your cookbook collection, if for no other reason that you can add something called an apple dappy to your baking repertoire.
